- Vietnamese chicken stir-fry noodle dish. A few years ago our friends introduced us to a local Vietnamese place that has turned out to be one of our favorite places to eat. I'll admit that I was beyond skeptical the first time we went (I generally don't like to try new or different things), but I'm sure glad we went! My good friend has created a version of one of the dishes there, and kindly passed the recipe along to me. I can't wait to try it out this week!
- Rotisserie chicken with PW's crash hot potatoes, and a green veggie.
- Chicken enchilada casserole (using half of the rotisserie chicken).
- BBQ chicken fajitas.
- Ground beef and rice casserole.

Happy 5 Months Troy!
This month I feel like you are really moving out of the newborn phase. You are stronger and more alert. You interact with us more. You smile more and we can get you to smile easily at us by talking to you or singing to you.
You learned to grab things (purposefully) this month. You can pull on the toys that hang from your car seat. I’m hoping that maybe, just maybe, this means you’ll start to be able to entertain yourself in the car. We still don’t know why you have such trouble in the car . . . you often scream when there seems to be no reason for it. We’re hoping that won’t continue much longer. You also like to chew on your shirt or fingers, and you’ve been chewing a lot more just in the past few days. I wouldn’t be surprised if your first tooth broke through during this next month.
You are really good at holding yourself up now, and you will often hold yourself up for many minutes while you lay on the floor or in your crib.
You learned to stick your tongue out this month. You are quite funny when you stick your tongue out at us!
You’ve had a few spells where you’ve slept better at night . . . I’m hoping that you’ll keep making progress towards sleeping through the night. You’ve also started sleeping for longer stretches during the day. Up until this past month most of the time you just wanted to take many short, short naps during the day. Now you usually take a few longer naps.
You tried oatmeal for the first time this month. You didn’t seem to like it, and you really didn’t seem interested in trying it at all. Hopefully you’ll be more interested in solid food when it is a fruit or veggie. It won’t be long before you are trying those!

Tot School
-Ella is 24 months old-
Last week we worked on the letter “D” using several printables from the COAH blog. Ella can now identify A, B, C, D, E, and sometimes L. She’s picking up letters quickly now. We’re still only working on one letter each week, but she’s learning to recognize the letters a lot more quickly than in the past.
In conjunction with the letter D, she had her first exposure to a lacing activity using the dinosaur from COAH. She didn’t get it at first – in fact she just ripped the dino’s head off even though I had laminated it – but by the second day I let her play with it, she was actually practicing lacing!
Ella has also been doing really well with counting to ten, although at times she forgets eight. We practiced counting using the Ten Tiny Puppies book.
Ella has been thoroughly enjoying playing with her shape sorter. It has a bunch of shapes and is a good challenge for her. Sometimes she enjoys just dumping them all out and putting them back in (with the lid open), but that works great too!

I Heart Faces: Cell Phone Picture
I am really not very good at taking pictures with my cell phone. Honestly, my husband is a lot better with his cell phone camera than I am! It is especially hard to take a picture of a moving baby or toddler with a cell phone! Anyway, with all of that said, I dug through my old cell phone pictures, and found this shot of Ella at our favorite BBQ place wearing her daddy’s baseball hat. I think I took this with my old phone, and I can't remember what kind of phone it was, haha.

- Creamy Taco Mac. This is a recipe that has caught my eye a few times when browsing around on Annie’s Eats, so I think it is time to try it!

- Ginger Beef Stirfry (also from Annie’s eats). I tried a similar recipe from Pioneer Woman, but wasn’t overly impressed, so I thought I’d try this one.
