It is going to be a crazy week, so only three meals this week.
- Chicken Scampi. This is a new recipe for me to try this week, but it looks simple and delicious!
- Chicken Enchilada Casserole. I’m going to boil my chicken with onions, carrots, celery, and spices and then shred it. Then I’m going to strain the liquid and freeze it to save for homemade chicken stock.
- Tamale pies (I know, this has been on my list for three weeks, but it keeps getting bumped!) or possibly grilled steaks.
